		<description>I made this soup again on Palm Sunday. I found it was a hassle to do the math to double the cornbread recipe, so I am posting it here,

&lt;strong&gt;Vegan Corn Bread&lt;/strong&gt;

1/4 C ground flax seed
3/4 C water
2 C all-purpose flour
2 C cornmeal
1/2 C sugar
8 tsp. baking powder
2 tsp. table salt
2 C soy milk
1/2 C canola oil

Bring the water to a boil in a small saucepan. Add the ground flax seed, reduce the heat to medium-low, and simmer the ground flax seed in the water 3 minutes or until thickened, stirring occasionally. Set aside.

In a  bowl whisk together the flour, cornmeal, sugar, baking powder, and salt until well-combined.


Add the ground flax seed mixture, soy milk, and canola oil to the flour mixture. Beat just until smooth (do not overbeat).

Turn into 9&quot;x13&quot; baking pan greased with canola oil. Bake on the middle rack of a 425 degree oven 20 to 25 minutes, or until a toothpick inserted in the middle comes out clean.

Cool about fifteen minutes before cutting into pieces and serving.</description>
